As soon as the weather turns warm and the peepers start peeping, I’m ready to move away from the heavy food of winter and focus on lighter fare.

I think about friends and family gathering to cookout and just enjoy being together. And I think about this standby recipe for Mandarin Orange Jello Salad that has been enjoyed at our gatherings for many years.
This is a low fat and low sugar recipe that works great for a crowd or can be halved to serve just a few people.
It won’t sit heavy in your tummy either. It’s fast and easy to prepare and can be served along with the meal or as a desert. We love it as a low calorie/low fat snack too!
2 small packages sugar-free orange Jello
24 oz. lite cottage cheese
16 oz. fat free Cool Whip
1 large can crushed pineapple – drained very well
2 small cans mandarin oranges in lite syrup – drained
Add all ingredients to a large bowl.
Place in serving container and chill for at least 4 hours.
***Recipe can be halved***
