Strawberry Cake With Buttercream Frosting

Ingredients

FOR THE CAKE

  • 1 - 18.25 ounce package white cake mix
  • 1 - 3 ounce package strawberry gelatin
  • 4 - large eggs
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup finely chopped fresh strawberries with stems removed
  • 1 cup vegetable oil
  • 1/2 cup milk

FOR THE FROSTING

  • 1 cup butter softened
  • 2 - 16 ounce packages powdered sugar sifted
  • 1 cup finely chopped strawberries with stems removed, optional

Instructions

FOR THE CAKE

  1. Beat cake mix and next seven ingredients at low speed with a mixer for one minute.
  2. Scrape down the sides and beat for two more minutes at medium speed, scraping the sides as necessary.
  3. Pour batter into two or three greased cake pans.
  4. Bake at 350 for 23 minutes or until center is springy when lightly pressed. Note - baking time may need to be adjusted, depending upon the number of layers.
  5. Remove from pans and cool completely before frosting.

FOR THE FROSTING

  1. Beat butter with a mixer at medium speed for 20 seconds or until fluffy.
  2. Slowly add powdered sugar and optional strawberries, beating at low speed until creamy.
  3. Add more sugar if too thin.
