9. CULINARY CORNER: Easy Salmon Picatta: Season 4 salmon fillets (6 ounces each) with salt and pepper. Lightly coat with 1/4 cup flour. Heat 2 tablespoons olive oil and 1 tablespoon butter in a skillet over medium-high heat. Cook salmon 4 to 5 minutes per side until golden, then remove. Add 1/3 cup fresh lemon juice, 1/2 cup chicken broth or dry white wine, and 1/4 cup drained capers to the pan. Bring to a boil, then simmer 3 to 4 minutes until reduced by half. Whisk in remaining 2 tablespoons unsalted butter, return salmon to the pan, spoon sauce over, warm 1 to 2 minutes. Garnish with 2 tablespoons chopped fresh parsley, and serve.
